November 14 is National Pickle Day. Bubbies, a favorite of mine for fermented kosher dill pickles, has recipes to incorporate pickles in your breakfast, lunch, dinner, and dessert on the festive holiday. Here is breakfast pickle dish 2 of 2. A delicious hummus toast, and cottage cheese relish toast are two easy-to-make toast combinations, certain to be crowd pleasers.
Ingredients
For the Hummus Toast:
- 2 tbl of hummus (roasted red pepper or whatever your preference is)
- A sprinkle of pine nuts
- 1 tsp of red peppers
- Bubbies kosher dill pickles, sliced
- Freshly cracked Pepper
For the Cottage Cheese Relish:
- 2 tbl of cottage cheese
- 1 tbl of Bubbies relish
- Everything bagel seasoning
- Sprouted sunflower greens
Instructions
- Slice bread and warm in toaster.
- Apply spread.
- Add toppings.
- Serve with Bubbies.
